Simple Chai Scones

I know I’ve talked before about my indifference to pumpkin spice everything in the Fall, you can read more here. For me, Fall is all about chai, but honestly I only like chai tea or lattes when I make it at home. Panera (St. Louis Bread Co actually, but you all can keep calling it Panera) has a seriously strong chai that pretty much tastes like you’re drinking the inside of a Bath & Body Works. Not something my stomach can handle.

I love the flavors and the smell of chai though, so I’ve been trying to find ways to get that delicious flavor besides tea. Last weekend I threw together this super easy recipe for chai scones.

Seriously, it took very little effort for you non-bakers out there who want to try.

You’re not going to need a ton of ingredients to whip up these delicious fall pastries.

2 cups all-purpose flour

3 tbsp sugar

1/2 tsp salt

2 tsp baking powder

1 tsp cinnamon

1/2 tsp ground ginger

1/2 tsp ground cloves

1/4 tsp ground cardamom

5 tbsp cold butter

1/4 cup milk

First things first, preheat your oven to 450 degrees.

In a large bowl combine your flour, sugar, salt, baking powder, cinnamon, ginger, cloves, and cardamom. Stir this until it’s all well combined.

Make sure your butter is cold, this is key to getting the dough the right consistency. Cut the butter into chunks and then add it to the flour mixture. Using your hands, rub the butter into the flour until the mixture has a grainy appearance.

In a separate bowl, whisk together your eggs and milk.

Pour the egg mixture into your flour and butter. Stir this until it forms one lump of very moist dough.

If it’s still a bit crumbly or has some flour in the bowl, add a small amount of water, 1/2 to 1 tablespoon, to get it together.

Next turn the dough onto a lightly floured surface and shape it into one flat disc. This will give you regular size scones; you can cut it in half to get smaller scones. The disc should be about 1 inch thick.

Sprinkle a bit of sugar on top of the dough if you like. Then cut into triangles. A pizza cutter would be super helpful here, but I do not have a pizza cutter. Probably because I’m a youngest child and don’t know how to share pizza so I always eat the whole thing myself.

Place the dough wedges on a baking sheet lined with parchment paper. Be sure to cut any excess off of your parchment paper, just to be safe. Pop these in the oven and bake for 15-17 minutes or until they are golden brown on top.

Once your Fall flavored delicious creations come out, I highly recommend eating one immediately.

While the weather gets cooler, these are the perfect pastry to have around. They keep really well, so you don’t have to eat them all at once. Or do eat them all, I certainly would.
