In case you aren’t that familiar with St. Louis, one of our favorite things is gooey butter cake. It’s kind of a big deal here. You know I have a real problem saying no to sugar, so it’s kind of a nightmare that this stuff is everywhere I go. It’s actually been a long time since I had any and most recently had some gooey butter cookies. Which are like the best cookies ever.
I decided to make some gooey butter cookies of my own because that seemed more reasonable than eating an entire gooey butter cake by myself. With Easter coming up, I decided to make them more festive and Spring-like by making funfetti gooey butter cookies.
These cookies are seriously so easy to make and are the most delicious. You only need a few ingredients and about 30 minutes.
Preheat your oven to 350.
1 box Funfetti cake mix
1 8oz cream cheese
1/2 cup butter
1/2 tsp vanilla
1 egg
Powdered sugar – for rolling the dough
First things first, beat together your butter, cream cheese, vanilla, and egg. Just beat until it’s smooth.
Then slowly add in your cake mix. I like to add it in slowly because it gets pretty thick. Also I just use a hand mixer because I have spent 27 years trying to decide what color of stand mixer to buy.
Roll your dough into small balls. Then roll them in the powdered sugar and place on a cookie sheet. Press down a little on them so they flatten out just a tad.
Bake them for 10-12 minutes.
And then you have perfectly done tiny pillows of deliciousness. These would be so perfect for as an Easter treat or any other Spring party!
